As a vegan of 1.5 years I still consider myself new to the lifestyle. I am by no means a professional. I still struggle to know what veggies I should be eating daily. I 100% do NOT eat enough vegetables. One thing I will say is I am not a responsible nutritional vegan. I take my multivitamin & try to have a balanced day of veggies, fruit & protein. I’ve struggle to enjoy veggies by themselves. I absolutely love veggie smoothies over fruit. You can try my beet smoothie if you like! I can’t eat veggies by themselves as a snack.. I must have hummus.. I consume hummus daily but when it comes to dinner & lunch I really enjoy broccoli salad like I said in my last post about 5 ways to welcome the cold weather. My secret for cooking better tasting veggies is to brush them with a quick-n-easy herb seasoning and then toss them on the grill, bake in creamy cashew sauce, or veggie stir fry!!

It may be autumn, however, firing up the grill is definitely a year-round activity in our home! Not only is grilled food fast and easy, but it’s also delicious! We love grilled veggies & my husband bought a fancy BBQ prior to becoming vegan so now we use it solely to grill veggies & tofu.

Grilled veggies almost always get a higher thumbs-up rating because the caramelizing flames and touch of smoke from grilling does wonders for enhancing flavour. One of the easiest veggies to grill is summer squash. Although the season for this popular veggie starts in the summer, it typically grows well into October. Of course, in many markets you can find this mild, yet tasty veggie year-round, even winter squash! Of course, there’s lots of other healthy veggies that taste wonderful grilled like bell peppers, asparagus, carrots, onions and more!

It’s perfect for enhancing the fresh flavour of your favourite veggies, making them so irresistibly-good, even the picky eaters in your home may find themselves asking for seconds. Yay!

Great Grilling Herb Seasoning Mix

Ingredients

• 3 tsp fine sea salt
• 2 tsp dried parsley
• 1 tsp paprika
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 tsp dried rosemary
• 1 tsp ground black pepper

Instructions

1. Add all of the ingredients to a small bowl. Mix well to combine. Transfer to a small jar, or recycled spice bottle.
2. To season your favorite veggies, add 1-2 teaspoons of the blend to a small bowl. Then add 1-2 tablespoons of oil, such as olive oil or avocado oil. Mix well to combine.
3. Brush the seasoned oil onto your favorite veggies and grill or roast for best results.
4. This flavorful blend is also perfect for seasoning poultry, fish and meats!
